Makes 1 Quart
- 1 cup TRULY® 100% Extra Virgin Olive Oil
- 3 egg yolks + 2 whole eggs
- juice of 4 large lemons (Meyer lemons if you can find them!)
- 1 cup sugar
- strawberries, to garnish
- preserved lemon, to garnish
- sesame seeds, to garnish
Using a blender, mix all ingredients together. Transfer to a double boiler, or using a bowl set over a saucepan of boiling water, cook mixture over medium heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken at about 170 degrees F, or just below simmer, and should coat the back of a spoon.
Let the curd set at least 2 hours in fridge. Serve topped with strawberries, preserved lemon & sesame seeds.
